Chicken Cake Recipe

This recipe is from Roni. It just seems as though it didn't make the move from her old site to her new site. The original recipe called for salmon, but I decided it would be just as good (and cheaper) with chicken... and it is! Low points and easy. I generally used canned chicken or leftover rotisserie chicken. Enjoy!

Chicken Cakes
Servings: 2
Points: 5
(Note: it's only 2 points for 1 cake, but 5 points for 2 cakes)

Ingredients:
  • 1 Tbsp Hellmann's Light Mayonnaise
  • 2 egg white(s)
  • 1/2 Tbsp dried parsley
  • 3 clove garlic clove(s), minced
  • 1/4 cup onion(s), finely diced
  • 1/2 cup bell pepper(s), finely diced
  • 1/2 cup spinach, chopped
  • 1 cup General Mills Fiber One Cereal made into crumbs
  • 5 servings Swanson Canned Chicken(2 of the smaller cans)
Directions:
Preheat oven to 350 degrees
Combine all ingredients except chicken in a bowl, mix well, and let sit for a few minutes.
While the mixture is sitting, mash up the chicken making sure to remove all large chunks.
Spray a cookie sheet lined with aluminum foil. Form the chicken mixture unto 4 patties and place on the foil. The patties will be loose, dont worry, they will hold together once cooked.
Bake for about 10-15 minutes until just about done. I turned the broiler on for a few minute to brown the tops.
